Granola

As we all know it is so vital to make sure you have something to eat in the morning to give your body that vital energy!

Here is a quick and easy recipe for granola – we like to make our weekly batch on a rainy Sunday afternoon while listening to our favorite music and passing the baking time by reading a good book!

  • 4 cups rolled oats (not instant)
  • 1 cup raw almonds, chopped
  • 1.5 cups flaked coconut
  • 1/4 tsp. finely ground sea salt
  • 1/3 cup liquid honey
  • 4 Tbsp. coconut oil, sunflower oil or butter

Directions:

  • Preheat oven to 180 degrees celsius.
  • In a small pan over low-medium heat, whisk oil and honey together.
  • Combine oats, almonds, coconut, and sea salt in a large bowl.
  • Pour oil and honey mixture over dry ingredients and stir well. Place on baking paper. Bake for 10 minutes; remove from oven and stir.
  • Put back in oven but remove and stir every 5 minutes or so until the oats are golden brown (approx. 25-30 minutes).

For additional flavor add any spices, nuts, seeds, dried fruit or super foods that are to your liking (make sure you add dried fruit and super foods after baking as to not burn them). Some suggestions are cinnamon, lemon zest, cashews, macadamias, walnuts, brasil nuts, sesame  sunflower or pumpkin seeds, figs dates, goji berries, bee pollen, flax seeds and chias seeds.
